In a copper mug over ice pour
1.5 ounces of vodka
1 ounce of Shrub
1 ounce ginger beer

1.5 ounces of our Blueberry Ginger Shrub
3.5 ounces of prosecco (we used Ruffino)
Garnish with blueberries
**Substitute prosecco with ginger beer or club soda for a zero-proof beverage

Coconut Lime Banana Bread
2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/4 cup butter, softened
2 large eggs
1 1/2 cups mashed ripe bananas (about 4 bananas)
1/4 cup greek yogurt
3 tablespoons Blueberry Ginger Shrub
1 teaspoon vanilla
1/2 cup + 2 tablespoons shredded, sweetened coconut, divided
LIME GLAZE
1/2 cup powdered sugar
1 1/2 tablespoons fresh lime juice
Zest of 1 lime
Preheat oven to 350
In one bowl mix flour, baking soda, and salt. In a separate bowl mix sugar and butter until smooth. In that same bowl mix in the rest of your wet ingredients including bananas. Then add your flour mixture to the wet ingredient. Place in oiled pan then add the remaining 2 tbsp of coconut flakes on top. Cook for 55 minutes, or until golden brown. While bread cools make your glaze then pour over! Enjoy!!!
